Lebanese cucumbers are a favourite in our kitchen – a great healthy snack for the kids, and perfect to dip into fresh hummus or tzatziki. 96% water, the silica in cucumber is an essential component of healthy connective tissue, which includes muscles, tendons, ligaments, cartilage, and bone. Makes for a super healthy morning or afternoon juice.

We just love GOOD tomatoes! Rich red, plump, juicy and full of flavour, a good tomato can make your day. It’s hard to beat a ripe tomato, sliced in half with a generous sprinkle of good salt. We often keep a tomato sauce in the fridge too, which we make simply by frying off some onion and garlic with olive oil, and adding a bucket of overripe tomatoes. In a couple of hours she’s ready and we’ve got tomato sauce for the week! Tomatoes are one of the lowest calorie vegetables around, they are also very low in fat contents and have zero cholesterol levels. They are an excellent source of antioxidants, dietary fibre, minerals, and vitamins. Technically speaking, a tomato is classified as a fruit – but as foodies, we like to group it together with other savoury delights, so here we are choosing to classify it as a vegetable – hope you don’t mind 🙂
